I have a thing for foods with a hint of sweetness. I also have a weekness for spicy foods. And bacon. So you can bet that this one was a winner in my book. All my kids liked it too. My daughter has decided that she does not like bacon {what planet is this child from???} so she peeled hers off. Thankfully, there were many kind individuals offering to eat it for her so it did not go to waste;)
As you can see below, the original recipe calls for this to be baked in the oven. The advantage of that method is that you have some delicious flavorful juices to drizzle over the meat and mashed potatoes {if you choose to make them as a side}. It was over 100 degrees the day I made this so there was NO FREAKING WAY that I was turning on the oven. They were fabulous on the grill to, AND as I like to tell myself, MUCH healthier;)
If you want to make this chicken teeming with deliciousness, here is all you will need!
Sweet and Spicy Bacon Chicken
4 chicken breasts cut in thirds (12 pieces)
Bacon slices
salt and pepper to taste
garlic powder
chili powder
brown sugar
Cut each breast into 3 pieces, season all the chicken with the spices, then wrap a bacon slice around each piece, roll in brown sugar and place into an oven proof dish....make sure you have some olive oil in the dish too, like 2 or 3 tablespoons is fine {I skipped this since I grilled them. I honestly think you could coat your dish with nonstick cooking spray instead to save a few calories}.
Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy. Delicious served with mashed potatoes with some of the gravy from the chicken drizzled on top.
**Also great on the grill! No juices to drizzle on anything, but still delicious!

ReplyDeleteI think you would be safe with 1/4 tsp each of salt and pepper and 1/2 tsp. each of garlic powder and chili powder. I would use about 1/3 to 1/2 cup of brown sugar to coat everything nicely. I hope it turns out for you!

DeleteI agree with Aaron...I put more spices on it and also drizzled some Sriracha hot sauce on the top of them before bbq'ing them and they were really good BUT next time I will pound out the breasts a bit just so they are all uniform thickness.

ReplyDeleteI flipped them in the above photo when I did them on the grill. If you are doing them in the oven there shouldn't be a need for it!
ReplyDeleteOn the grill how long you cook them really depends on your proximity to the flame, etc. I guess I just keep an eye on them. When I think they are done I just check one to see if the juices run clear!

But I might suggest amounts of spices to use. i sprinkled all the chicken but feel i neeed even more chili powder because for me there wasnt enough kick because i didnt know how much to use... but next time i will know, but other than that, i will be making this again for sure!! thanks! :)

ReplyDeleteI've made these twice now and the first time was much better. Def. don't turn them over half way through if baking in the oven. All that does is insure that NONE of the Bacon gets crispy. Had to take all of that delicious Bacon and throw it in the can :(. Throwing away Bacon in this House is a major sin so needless to say I wasn't too popular around here. Def. think this recipe would work best on the grill.

ReplyDeleteI marinaded it first...bad idea. It came out way too sweet, which I was not found of, but if you're anything like my man you'll love it (he at almost all of it). I shouldn't have messed with the directions (shame on me) so I'm sure it would have been perfect without the marinade! Can't wait to try it again...the right way!

I questioned how the brown sugar would taste, but that was the "secret" ingredient that made it so yummy! Well, that and the bacon! Great recipe! My whole family loved it!
I cubed the chicken and put on skewers!! my kids loved them ! did not have to bake quite as long as the chicken pieces were smaller. yummy!!

DeleteI Make a chicken dish similar to this, only fillet the chicken breast, spread on whipped cream cheese and chives, roll it up, then wrap it with a slice of bacon. no other ingredients....Place in 8"x 11" glass casserole dish and put on rack 2 slots down from broiler. Bake at 400 degrees for 40 min. After 40 min., turn oven to Broil, take out the dish, turn over the chicken, and return dish to same place in oven...let bacon crisp for 5 min. (plus or minus). Keep an eye on it as all ovens tend to differ. Then it's done!! A baked potato goes well with this as you can pour the excess sauce over it! Yummy!!

ReplyDeleteI have made these before and found that the bacon created too much grease in the bottom of the pan so I placed a cooling rack in my foil lined pan. I placed the wrapped chicken on the cooling rack which allowed the grease to drip to the bottom of the pan. It made for easy clean up. This is definitely a family favorite in our house.

Delete30-40 minutes at 400 degrees will ANNIHILATE 1/3 of a piece of chicken. It would annihilate a whole chicken breast. A piece of chicken that size doesn't need more than 20 minutes, tops. If the bacon won't cook in that time, par cook it slighty first.. but 30 to 40 min will seriously overcook this chicken.
ReplyDeleteMy friend and I made these on the same night. I cooked mine in the oven... they were so moist, and the sauce that was rendered was delicious over the chicken. My friend grilled hers and they turned out very dry.

DeleteThis was fantastic! The flavor combination of the bacon, chili and brown sugar were wonderful! I made honey roasted red potatoes to go with them. Absolutely wonderful. For variation I may try with pure maple syrup instead of brown sugar to keep it closer to paleo, but it rocks as it sits.

Was the bacon you used a thing bacon? From the picture it seems like it was. Aside from that the recipe was amazing. Once I can figure out how to crisp the bacon I will definitely try it again.
ReplyDeleteThe instructions are not complete on this. My husband did it. He's a great cook. Why you'd need any oil is beyond me. With the bacon it produced I've 3/4 cup of grease. I was really disappointed. Maybe we missed something. I might try again on the grill but the over was a disaster. I am feeding the leftovers to my dogs. They love chicken..,
ReplyDeleteIf you see my remarks on the recipe, I recommended using nonstick cooking spray in place of the olive oil. I thought the olive oil in that quantity was unnecessary. I prefer to do these on the grill myself but the recipe in it's original format was to be done in the oven with the olive oil so I included that. I am so sorry it didn't turn out for you!
DeleteMade this tonight and my husband ate every bite!! There is a local meat store in our area that makes a chicken jerky that he loves. He said it tasted exactly the same, which is good because that jerky is expensive!!!! Will definitely be keeping this one on the roster!

Don't know if this was said, but if you are baking it, drain the fat after 30 minutes, then cook for an additional 10 minutes at 450 to finish the bacon.

Question: I want to make this tomorrow on the grill... Do you have to precook the bacon before wrapping? I know when I do bacon wrapped scallops, I cook it halfway through before wrapping, but that's because the scallops don't take very long. Do i need to do the same before wrapping the chicken, or is it okay to do it raw, as the chicken takes longer to cook? Thanks in advance!
ReplyDeleteNo you won't need to cook the bacon first. The chicken needs to cook longer then scallops would. I made it on the grill and placed the bacon wrapped chicken a sheet pan (cookie pan) to help with flare ups from all the sugary goodness. Help that helps

(it could just be my oven) This time I divided the cooking time up. I started at 350 for 15 minutes, then 375 for 10 and 400 for about 5 minutes. It was juicy and the bacon was just right.

The first time I used Pam spray to coat the bottom of the oven proof dish, which resulted in no sauce and the brown sugar being a bit burned on the bottom. It was still a delicious recipe. This time I used the olive oil in the bottom of the dish that made a huge difference resulting in the brown sugary gravy bubbling up the sides of the chicken. I also used Cajun spice in place of chili powder. My son loved it and I will certainly make it time and time again. I told him it tasted so good I could "lick the plate" ha ha but being the adult I am, I resisted !! Thanks for sharing this delicious recipe !

They put out a very similar recipe using the same ingredients but they added their BBQ 3000 seasoning to the brown sugar mixture. ReplyDeleteSo good!! I used tenderloins and cooked on wire rack for 20 min. I also added some cayenne for spice. If your bacon isn't getting crispy turn the broiler on for a few min. at the end but make sure to watch it, they'll burn quickly.

ReplyDeleteI wanted to try some orange chicken I found on Pinterest. Got everything & made it...it was DISGUSTING. I'd remembered I'd bookmarked a few other pages & came across this. Just made it & SO happy I did! I usually just throw some chic breast on the Foreman & then top w/ cheese & bacon, but this is SO much better! There's nothing to it & it's DELICIOUS!
ReplyDeleteI'm planning on making this tomorrow night on the grill for a date. He likes his food really spicy; I like a little spice so I think this will be great for both of us. I'll probably try the siracha on a couple of them for him. Any suggestions for some kind of sauce to serve on the side since I won't be able to gather the drippings? Also I would like vegetable suggestions.
ReplyDeleteI made mine with sauteed sugar snap peas. Sauteed green beans are also a good choice.

I loved this and so did my family, two kids included :) I used turkey bacon...it didn't get crisp but it was still really good. I am sure on a wire rack over a cookie sheet would have done the trick...Grilled I imagine it would be amazing. I wasn't sure about brown sugar but it was very good. Something different and delicious!

I did mine on the grill,
400 degrees, 22 minutes, on an webbed rack with aluminum foil under it to deflect the flames from oil from bacon.
This was a great dinner.
Awesome recipe! Kids loved them. I used tenders instead. Came out so good. Making them again tonight!

I used tenders the first time and it turned out great. 2nd time i tried it I cut the breast into nugget size, seasoned the chicken, wrapped in smaller pieces of bacon, used toothpicks to hold together, and cooked in the crock pot, I eyeballed the amount of brown sugar I used. It turned out amazing. HUGE HIT at a friends get together.
ReplyDeleteHave made these multiple times and are a family favorite. I use a cast iron skillet and cook on the grill or gas stovetop. It cuts down the prep time, no heating up the oven in the summer, and you still get all the yummy juices.

ReplyDeleteMy boyfriend is obsessed with this. He always has chicken and bacon in his fridge and is always dying for me to bring over the brown sugar and spices. Unfortunately, every time we make it, it comes out a little dry for my taste. Any suggestions? Thanks!

ReplyDeleteThe only seasoning issue I had was the salt. I used sea salt and garlic powder salt. It was a bit much yet a key ingredient. I should have used(like the blog stated) garlic powder and less sea salt. Not bashing the blog just hoping to help someone else who has limited ingredients. :)) Happy cooking ladies and/or men. :)

ReplyDeleteI have made a similar recipe from Paula Deen as an appetizer. You cut the chicken into bite size pieces, coat them in equal parts brown sugar and chili powder and then wrap in a half slice of bacon secured with a toothpick. Everyone always raves about them!

ReplyDeleteUse a meat thermometer to check for doneness of the chicken. When chicken is done I turn broiler on for a few minutes to get the chicken crispy.

ReplyDeleteSome friends of ours made these and they can also be made using already packaged chicken tenders from the chicken stores. Cut them in half lengthwise and then into 1 1/2 inch cubes of chicken. Cut your bacon strips in half and they are the perfect size for snacks or appetizers and they are wonderful! You can't stop eating them!

This looked so delicious that I had to make it right away for dinner. This was so easy to put together. It was the most delicious chicken. My husband is not a sweet and savory mixed kind of guy and saw me rolling this in brown sugar and was very nervous about it. As we were eating it he said this was the best chicken I had ever made. Big Big Big hit with him. He even said I should make it when we have company. I will be making this again and again. Thank you so much for the recipe. FYI: I did use parchment paper in the pan and was very glad I did because with the high heat some of the brown sugar got pretty stuck on.
