Stuffed Pizza Rolls

I was just browsing through some photos from last month and I found the photos of these Stuffed Pizza Rolls. I can't believe I forgot to post them!  I made them one day for my kids for lunch.  My kids are forever wanting me to buy the prepackaged pizza rolls, but I know those are so incredibly bad for them.  These might not be health food exactly, but I feel much better about serving them.  I think that they taste oh so much better too.

Here is what you will need:


Stuffed Pizza Rolls

1 roll Refrigerated Pizza Crust (thin crust)
Mozzarella Cheese, shredded
Pizza Toppings of you choice- I kept it simple this time with just pepperoni that I diced up per my childrens' request
1 Tbsp. Olive Oil
1/2 tsp. Garlic Powder
1 tsp. Italian Seasoning
2 Tbsp. Grated Parmesan Cheese
Warmed Marinara or Pizza Sauce, for dipping (I used my homemade pizza sauce)

Preheat oven according to refrigerated crust instructions, usually 400 degrees.  

Unroll your pizza dough onto a lightly floured surface.  Pat or roll the dough so it is about 12" by 8".  You are going to want to cut it into 24 squares, so just eyeball it if you need to.  Use a pizza cutter to slice the dough into 24 squares.

Place cheese and desired toppings on each square, just eyeball how much.  Keep in mind that you will need to be able to enclose the toppings in the dough.  Note: Do not put pizza sauce on squares!  It is for dipping!

When all of your dough squares have cheese and toppings on them, carefully life up each square and wrap the dough around the toppings.  Pinch to make sure that each ball is sealed shut and then place them, seam side down, in a lightly sprayed pie pan (or similar sized dish).  

Using a pastry brush, brush the tops of the rolls lightly with Olive Oil and then sprinkle with the garlic and Italian seasoning and top with the Parmesan cheese.  

Bake in the oven for 15-20 minutes or until golden brown on top.  Keep an eye on them!  Doughs vary, so you might even want to check them after 10 minutes.  

Serve warm with pizza sauce on the side for dipping.

Pizza Burgers

I must say, these were the best pizza burgers that I have ever had.  I think they would be even better with some sliced black olives and maybe some mushrooms.  My husband and kids would turn their noses up at them then, but if you have more adventurous eaters, it would be great!  

I invented this recipe last night.  I had pizza burgers on my menu for the month, and I forgot to write down the recipe I intended.  I was in a hurry, so I just created my own!  

Here is the meat mixture all ready to go!  May I add, I LOVE my new chop and stir?  Thank you Cyndee!


Pizza Burgers

1 lb. ground beef
1/2 c. minced onion
1/2 Tbsp. minced garlic
1/3 c. pepperoni, quartered
15 oz. jar pizza sauce (I used my own homemade)
Shredded Mozzarella
Buns, buttered and toasted

In a 12 inch skillet, combine ground beef, onion, and garlic.  Cook until ground beef is browned.  Add pepperoni and pizza sauce.  Simmer over medium-low heat for about 10-15 minutes.  

Serve on a toasted bun topped with mozzarella cheese!

Simple and delicious!

BBQ Beef Bites

I really need to figure out a time that will work out for me to blog.  I just decided to start this blog and I already have pictures of about 5 different things waiting to be blogged about!  I would like to transfer over my recipes from my other blog too.  I wonder if there is an easy way to do that.  Anyone???

Speaking of easy, this recipe is VERY easy.  I made the filling mixture for these the other night ahead of time, then when we got home at 7 from hockey practice, I was able to have them on the table in no time.  I usually serve these with a salad, but I think they would be really good with coleslaw too.


BBQ Beef Bites

1 lb. ground beef
1 c. BBQ sauce of you choice (I used Famous Dave's Original)
1 1/2 Tbsp. Dried Minced Onion
3 Tbsp. brown sugar
2 tubes of refrigerated biscuits (not flaky layers)
1 c. shredded cheddar (I use sharp and I grate it myself.  I am a cheese snob like that;)

Preheat oven to 400*.  Brown and drain ground beef in a medium skillet.  Add BBQ sauce, onion, and brown sugar.  Heat through.  Spritz 2 muffin tins with nonstick cooking spray.  Flatten biscuits and form them into the muffin cups.  They WILL NOT be big enough to reach to the top, don't worry about it.  You should have 20 biscuits.  Equally distribute beef mixture between the biscuits.  Top with shredded cheddar.  Bake for about 10 minutes or until cheese is melted and biscuits begin to turn golden.
